The different steps of working the vines begin by a systematic thinning in order to limit the yields, and then several manual leaf removals. A frequent trimming of the foliage in summer allows the grapes to insolate in the sun, and provides us fleshy grapes which ripen better.
We are working all our soils so that the roots get deeper - we also want to respect the soil wildlife.
The phytosanitary protection is yet essential, based on observation of the vines, and thinking. Each action is justified and non systematic. We use these products in a minimal way for a better respect for the environment.
The manual harvesting is followed by a manual and mechanical qualitative sorting.
The vinifications employed have been passed down from generation to generation, resulting in wines of outstanding and consistent quality.
